Grilled Pork Tenderloin

Ingredients

  • 2 large pork tenderloins
  • 1/3 cup orange marmalade
  • 3 tablespoons soy sauce
  • 1/3 cup orange juice
  • 1 can beer
  • 1 tablespoon mustard
  • 2 cloves garlic, minced

Directions

1.
Combine beer, orange marmalade, soy sauce, garlic, mustard, and orange juice in a deep bowl. Submerge the pork tenders in marinade, and let stand for at least an hour.

Remove pork from marinade, reserving marinade and cook over open fire, turning frequently and basting with marinade. Or bake in a 450 degree oven for 20 minutes, then reduce heat to 350 degrees and bake for 15-20 minutes more. Test for doneness.

Place marinade in a saucepan and bring to a boil for a few minutes. Place cooked tenderloin a baking dish, and cool. Pour marinade over tenderloin and refrigerate.
4.
Serve pork at room temperature, sliced in medallions with Herb Mayonnaise.
