Mint Jasmine Rice

Ingredients
- 1/2 cup onion, finely chopped
- 1/4 cup fresh mint, coarsley chopped
- grated zest of 1 lemon
- 1/4 cup fresh Italian parsley, coarsely chopped
- 1 teaspoon kosher salt
- 2 teaspoons fresh lemon juice
- 1 cup jasmine rice
- 1 tablespoon olive oil
